KARHU AND BOREAL
Rooted in a shared appreciation for Finnish nature, craftsmanship and the changing seasons, the collaboration explores how inspiration can be found in the landscape that surrounds us.
Located in Helsinki's Design District, Boreal has quickly established itself as one of Finland's most exciting contemporary restaurants.
Guided by the rhythms of the seasons, the restaurant works closely with organic farmers, wild foragers and responsible producers, creating menus that celebrate the best of Finland's natural environment while championing regenerative agriculture and thoughtful sourcing. In 2026 they were awarded their first Michelin star.
To mark the launch, KARHU spent the day alongside the Boreal team at one of the farms that supplies the restaurant on the outskirts of Helsinki.
Walking the fields together, ingredients were carefully selected to create three exclusive dishes, each inspired by one of the new Mestari 76 colourways. Like the collection itself, every course reflects the textures, colours and flavours of the Finnish landscape.
The experience begins with forest mushrooms, cured egg yolk and koji, celebrating the rich flavours found beneath Finland's forest floor.
The second course features responsibly sourced lamb accompanied by a harvest of seasonal vegetables grown on the farm that morning.
Finally, fire and smoke take centre stage with a barbecue mussel skewer, glazed and finished with a spice blend, served on a small stick gathered from the surrounding forest.
The collaboration reflects the values shared by both KARHU and Boreal: an appreciation for craft, a deep respect for nature, and the belief that the strongest ideas emerge through meaningful connections to place.
Whether expressed through footwear or food, both brands look to Finland's landscape as a continual source of inspiration.
